Great Canadian barbecue recipes
(NC)-It's no secret that Canadians love their barbecue. As the temperatures heat up, Canadians head out to the backyard to spend sunny afternoons with friends and family cooking up a feast on the grill. Canadian Club Barbecue Sauces are the perfect way to compliment this truly Canadian summer experience.
Ryan Jennings, co-author of Cooking with Booze suggests adding an extra dose of Canadian flavour with recipes containing Canadian Club Barbecue Sauce. Canadian Club Barbecue Sauce is the only barbecue and steak sauce, the only barbecue and steak sauce on the market made with real Canadian Club whisky, to help make your barbecue the hit of the summer!
Canadian Club Sticky Ribs
(4 servings)
2 racks pork back ribs
1 tbsp (15 mL) extra virgin olive oil
2 tsp (10 mL) each paprika, ground cumin and ground black pepper
1 tsp (5 mL) salt
2 tbsp (25 mL) Canadian Club whisky or water
3/4 cup (175 mL) Canadian Club Chicken and Ribs Barbecue Sauce
Preheat grill to low.
Trim excess fat and remove membrane from underside of ribs then rub with olive oil. Combine paprika, cumin, pepper and salt and rub onto both sides of ribs. Drizzle ribs with Canadian Club or water then wrap racks separately in 2 layers of aluminum foil and place on grill, meat side up. Close lid and cook for 1 1/2 hours.
Remove foil from ribs and continue cooking with the lid open for 20 to 30 minutes, turning every 5 minutes or so. Brush with Canadian Club Hickory Bold Barbecue Sauce and cook for 5 to 10 minutes longer, turning once. Cut into 3-bone pieces and serve.
Smoky Salmon Burgers with Maple Citrus Mayo
(4 to 6 burgers)
1 pound (500 g) boneless, skinless salmon, finely chopped
1/2 cup (125 mL) bread crumbs
1 egg, lightly beaten
4 green onions, minced
1 tbsp (15 mL) Canadian Club Honey Smoke Barbecue Sauce
Salt and pepper, to taste
Maple Citrus Mayo
2/3 cup (150 mL) mayonnaise
1 tbsp (15 mL) each maple syrup and lemon zest
2 tsp (10 mL) fresh lemon juice
Salt and pepper, to taste
Combine salmon, bread crumbs, egg, green onions, Canadian Club Barbecue Sauce and salt and pepper. Form into patties, cover with plastic wrap and refrigerate until ready to grill, up to one day in advance or make ahead and freeze.
Meanwhile combine mayonnaise, maple syrup, lemon zest, lemon juice and salt and pepper. Cover and refrigerate until ready to use.
Preheat grill to medium-high.
Grill burgers 3 to 4 minutes per side. Turn carefully and continue cooking for 3 to 4 or until just cooked through.
Serve salmon burgers on toasted rolls with lemon dill mayo and slices of red onion and fresh tomatoes.
