Add a sweet indulgence to Easter dinner

(NC)-Special occasion meals call for special desserts - and Easter is no exception. This year, whether you're hosting an extended family get-together or a small family dinner, top off your meal with a slice of indulgence everyone will love.

Cherry Fluff Pie is an easy and delicious dessert that is perfect for Easter dinner. The crust is made with Kellogg's Rice Krispies - a family favourite and a surprising alternative to graham crackers or wafers that gives the pie a light, crunchy texture - and the creamy filling satisfies a sweet tooth without being too rich.

And the best part? You can make it a day ahead, so you can spend more time with your family on Easter day and less time in the kitchen.

Cherry Fluff Pie

Ingredients

. 2 tbsp margarine or butter

. 1/4 cup golden corn syrup

. 1 cup semi-sweet chocolate chips

. 2 cups Kellogg's Rice Krispies cereal

. 1 cup maraschino cherries chopped

. 1/2 cup syrup from cherries

. 1/2 cup cold 2% milk

. 102 g vanilla instant pudding

. 1 cup whipped cream or frozen whipped topping thawed

Preparation
1. In 2 L (2 quart) saucepan, cook margarine, corn syrup and chocolate chips over low heat, stirring constantly, until smooth and blended. Remove from heat. Add Kellogg's Rice Krispies cereal; stir until well coated. With back of spoon, press mixture evenly into bottom and up side of 23 cm (9-inch) pie plate coated well with cooking spray. Refrigerate until chilled.

2. In large mixing bowl, whisk together cherry syrup, milk and vanilla pudding mix until smooth.

3. Fold in cherries and whipped cream. Spread in crust. Chill 3 hours or overnight before serving. Garnish with additional whipped cream and chocolate curls, if desired.
